Ingredienti per 4 persone:
250g. of rice
1 white onion
1 handful of young stinging nettle tips
1 glass of dry white wine
1 litre of stock
100gr grated Gruyiere cheese
Salt, pepper (as required)
Oil (as required)
Butter (as required)




Ricetta:
Risotto with Stinging Nettle TipsChop up the onion into fine slices. Place in a pan and cook with a little oil, then add the chopped stinging nettle tips. Gently cook together on a low flame. Add the rice, then the wine which should be allowed to evaporate. Continue cooking, adding stock to keep the rice moist. When almost cooked, add the Gruviere cheese and the butter. Allow to thicken and serve hot.
