Panicles of pasta stuffed with lobster and served in baby marrow flower sauce

Ingredienti per 8 persone:
200 gr. fresh pasta
2 boiled and shelled lobsters
150 gr. baby marrow flowers
Butter as required
Tomatoes as required
1 dl of grappa
150 gr. of ricotta
Marjoram as required
70 gr. baby marrows
1 shallot
Salt and pepper.
Ricetta:
Roll out the fresh pastry, cut into circles with a round pastry cutter, then stuff with the lobster and close to make the typical panicle shapes.
Emulsify by reducing the butter. Quickly fry the previously cooked panicles, add the baby marrow flowers, the chopped fried baby marrows and the chopped tomatoes.
Top with olive oil.
