Baked Beef fillet with basil and Anghelu Ruju sauce

Ingredienti per 4 persone:
1,200 Kg. fillet of steak
60gr. basil
1 dl. Anghelu Rujio
60 gr. butter
60 gr. fresh breadcrumbs
1 dl. steak juices
Mixed seasonal legumes to taste
Salt and pepper

Ricetta:
Baked Beef fillet with basil and Anghelu Ruju sauce Blend together the basil, butter and fresh breadcrumbs. Leave to stand in the fridge and later, using some transparent paper, press down until about 1/2 cm. thick. Use the mixture to make medallions about the same size as the fillet steak. Reduce the wine, add the steak juices and mix together with some oil.
Quick fry the fillet steak, remove from heat and place the basil medallion on top. Place for a short time under the grill until golden. Quick-fry the seasonal legumes with clarified butter.


Note:
Arrange the seasonal legumes and the steak fillet on a serving dish and season with the sauce.
