One of the innovators of Italian catering, Fabio Picchi was also among the first to understand the cultural value of the traditional cuisine. 27 years ago he decided allow the public to share the secrets of his passionate experimentation. Thus Cibreo opened and here, in the words of the New York Times, Fabio “speaks like a poet and cooks like a magician”. His informal style has gradually transformed the restaurant into a meeting place for artists, politicians and people in show business, as well, of course, for his regular clients, who continue to appreciate and enjoy the genuine flavours in his cuisine. His dishes exalt flavours that many of us have long forgotten, dazzled by the excesses of the many gastronomic trends of today. His elegant soups, from ribollita (vegetable bread soup), purèe of peppers to herbal polenta, his prestigious stuffed pigeon with Cremona mustard or cream of fresh cod, as well as all the dishes usually found in traditional Tuscan cooking, acquire additional personality, thanks to the art of Fabio Picchi, whom many consider the best cook in Florence. The ancient furnishings of the bar, situated next door to the restaurant, act as a backdrop for servings of snacks and tasty nibbles from the restaurant. The cellar boasts over 150 types of wine, most of them Tuscans.
